The story of being in contact with olives…
Every olive oil is different, because each producer approaches the olive with another manner. However, olives are an artist fruit and, like any artist, give their best quality work at the right time, when it is not under stress, but at the peak of its creativity. Olives can give a lot of oil when approached with a yield-oriented approach, but the value of the resulting product is very high when it is quality-oriented.
In other words, those miraculous nutrients contained in olives are very sensitive to heat, light, oxygen, the environment in which they are stored, and when the only target is the amount of oil that comes out, the procedures applied almost offend these miracles. By subjecting it to high heat treatment, the oil from olives squeezed by industrial methods is very much removed in quantity, but the nutrients it contains disappear during these processes.
If you want olives to give you a work of art, it is necessary to be friends with it, to understand its language. Olive oil, which you obtain by harvesting olives that have grown to the right shape by using science not quantity-oriented but quality-oriented, from the branch just in time, squeezing it at the right temperature and resting it for the right time, is also a real work of art. That’s our secret.
